One of the thing that got a lot of us heavy in the first place are all those fast food joints. Do the words “You want fries with that?” mean anything to you?
They do to me.
So when Julie in PA, a very frequent contributor, submitted this very unique recipe, it got rave reviews and a lot of comments. And, it’s extremely easy to prepare.

This recipe was originally submitted by Bonnie. She didn’t tell us where she was from, but if you’re looking for something terrific for a weekend lunch — or weekday leftovers — this sounds like a real treat.
Cheeseburger Quiche
Ingredients
- 1 lb lean ground beef
- 1 small onion chopped
- 4 slices crisp cooked bacon crumbled
- 3 eggs
- 1/2 cup mayonnaise
- 1/2 cup half-n-half
- 8 oz, shredded cheddar or swiss cheese
- garlic powder to taste

So how the heck can you have a delicious Chinese dinner without rice?Here’s how: There’s about 43 grams of carbs in a cup of long grained white rice, and that pretty much ruins any Atkins Diet.
So there’s this problem: I don’t know about you, but one of the things I look forward to most in a Chinese meal is the rice. My kids are voracious rice eaters, especially with Soy Sauce on it (be careful — there’s usually flour in there!). And I’m no slouch myself.
So what do you do when you’re about to sit down at a delicious Chinese meal — Cashew Chicken sounds good — and not be able to mix it up with rice?

Continuing with my series of Chinese Style recipes for you, here’s some delicious Cashew Chicken. And for an ultra-low-carb meal, leave out the Cashews. You’ll still have a delicious Chinese dinner.
Ingredients
- 1lb Boneless, skinless chicken breast or thighs
- 1/2 teaspoon grated ginger root
- 2 tablespoons soy sauce (use lite soy sauce if you prefer)
- 1 teaspoon Splenda or other sweetener
- Peanut oil (or canola)
- 1 teaspoon sesame oil
- 1 clove garlic, crushed
- 1 cup cashews (leave out for ultra low carb)

There’s more to a good egg drop soup than you might think. To get it to taste just right takes a real good recipe.
Here’s a great recipe, originally posted by “Karen” in March 2004 that is sure to warm you from the inside out, and give your meal an authentic chinese flair.
- 6 cups chicken stock
- 1/2 cup thinly sliced green onions
- 1 tablespoon fresh ginger
- 4 shiitake mushrooms, stems removed & thinly sliced
- 1 teaspoon soy sauce
- Pinch finely ground white pepper
- 2 large eggs, lightly beaten

You don’t often find a recipe that is good for breakfast, for lunch, and for dinner all at the same time, but a good quiche certainly is.
And this one’s a good Quiche!
Ingredients
- 1 TBL butter (use this to grease the pan)
- 10 eggs, beaten
- 1 cup cream
- 8 ounce pkg shredded cheese (DH likes swiss, cheddars good too)
- 1 tsp pepper (less if you don’t like pepper)
- 1lb summer sausage, or smoked sausage, or some other kind of cooked meat–ham, chicken, beef,…possiblities are endless. You can even use cooked crab and shrimp but I think the flavor gets lost. I think you could add more meat if you wanted to too.
- 2 shakes of Tabasco sauce
- 1 finely chopped onion — we like to saute it before adding it to the mixture.
Grease pie plate (cookbook calls for slow-cooker)

Basil is one of our favorite herbs at our home, and Chicken is a staple food for us as well. We tend not to each too much beef, and chicken is so easy to prepare.
It’s also easy to become bored by making the same thing every day.
Well that’s about to change with this recipe, which I posted originally in June of 1999. I’m not sure where it came from originally but if you desperately need a new way to prepare chicken, give this a try.
BASIL GRILLED CHICKEN Makes 4 servings.
- 3/4 teaspoon pepper coarsely ground
- 4 chicken breasts without skin
- 1/3 cup butter melted
- 1/4 cup basil, chopped
- 1/2 cup butter, softened
- 2 tablespoons basil, minced
- 1 tablespoon Parmesan cheese, grated
- 1/4 teaspoon garlic powder
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
