4 small zucchini
32 oz Ricotta Cheese
2 Eggs
32 oz Mozzerella
1/4 cup Parmesan Cheese
Homemade Tomato Sauce
1 lb Ground Sausage
Preheat oven to 350. Fry sausage. In a large bowl, mix ricotta, parmesan cheese, eggs, 3/4’s of mozzerella cheese and fried up sasuage. Stir well. Peel zucchini, and slice very thinly preferably on a meat slicer for uniform pieces. Thinly spread tomato sauce in the bottom of a baking dish. Place a layer of zucchini slices down, then the meat cheese mix, then more sauce. Repeat until all is used up. When you lay the last of the zucchini, spread the remaining sauce and mozzerella cheese. Cover and bake for 45 minutes. Uncover and cook for 15 minutes more or until bubbly.

i would really like to try the lasagna, sounds yummy! but, i am living in spain at the moment and unable to buy “ricotta cheese” do you have a substitute or maybe know of a name for the cheese in spainish??

A fantastic substitute for ricotta cheese is cottage cheese. Good luck and hope you enjoy it!
