6 eggs
2 tbsp. Atkins Baking Mix
1 cup mozzarella cheese
1 cup grated parmesan cheese
2 tsp. butter
1/2 cup heavy cream
salt and pepper to taste
Boil eggs. Preheat oven to 350 degrees. Cut boiled eggs into thin slices lengthwise. Place up-side-down in a greased casserole dish. In a saucepan melt butter. Pour in baking mix and stir until smooth. Stir in heavy cream and mozzarella cheese until melted. Sprinkle with salt and pepper. Pour mixture over boiled eggs and top with parmesan cheese. Bake for approximately 15-20 minutes. Serve immediately!

If you are afraid to give your personal (credit card number, address, etc) on the internet, where else can I purchase Atkins Baking mix ?

You may be able to buy the mix at a grocery store, but if you want, you can also make it yourself! Here is the recipe:
1 cup soy flour
2 tablespoon baking soda
2 tablespoons Splenda
2 cups soy protein isolate
1 teaspoon salt
Sift all ingredients together. Store in an airtight container in a cool, dark place. Easy, right?
Makes about 3-1/4 cups
