1 1/2 pound fresh or frozen catfish, sole, or flounder fillets,thawed
1 med onion
2 medium tomatoes
2.5 oz jar slice mushrooms
1/2 tsp basil
1/2 tsp fennel seed
2 cups mixed frozen vegetables
2 tbs olive oil
1/4 tsp salt
1/4 tsp pepper
1/3 c grated parmesan cheese
Drain mushrooms. Slice tomatoes and onions. Heat oil in a large skillet over med heat. Mix in onion, basil, mushrooms, and fennel seed. Cook for 4 minutes or until onions are soft. Add in frozen mixed vegetables and fish. Season with salt and pepper. Place tomato slices over fish. Reduce heat. Cover and cook for approximately 14 minutes. Remove and sprinkle with parmesan cheese and cover. Let cool for about 3 minutes.
Serves 6. 11 carbs per serving.
Total carbs per serving = 11 g Makes 6 servings
