This recipe was originally submitted by Bonnie. She didn’t tell us where she was from, but if you’re looking for something terrific for a weekend lunch — or weekday leftovers — this sounds like a real treat.
Cheeseburger Quiche
Ingredients
- 1 lb lean ground beef
- 1 small onion chopped
- 4 slices crisp cooked bacon crumbled
- 3 eggs
- 1/2 cup mayonnaise
- 1/2 cup half-n-half
- 8 oz, shredded cheddar or swiss cheese
- garlic powder to taste
Procedure
Brown ground beef in skillet with onion ( I also add a little green pepper). Drain and press in the bottom of a deep dish pie pan. Set aside. Combine remaining ingredients in bowl and whip well. Pour mixture over beef “crust” and bake 40 to 45 min at 350 degrees. Until a knife inserted in the middle comes out clean. Cool 15 min before slicing.
Makes 6 servings 2.2 grams of carbs each.
I found that using Kraft mexican shredded cheese and adding about 2 T sour cream makes this tastier.
This is really good!!!! And reheats in the microwave very well.
( I have experienced with this a lot, I like it a tad bit spicier, I add some hot sauce to the hamburger mixture and garlic)
