Renee came up with a great recipe for Chicken Enchiladas. Try it out and let us know what you think!
What you need:
Procedure
-
Dip low carb tortillas (I found them at Walmart) into El Patio red enchilada sauce (2 carbs per 1/4 cup).
-
Fill tortilla with shredded chicken and shredded cheddar chese
-
Roll up and place in baking pan.
-
Fill pan with the remaining tortillas prepared the same way.
-
Sprinkle more shredded cheese over the top of the cassarole pan to cover all enchiladas
-
Add a few sliced black olives on top.
-
Bake for 20 minutes or until cheese is melted.
-
Serve with a sour cream and thinly sliced green onions.
