INGREDIENTS
4 THIN SLICES OF PROSCIUTTO
4 SLICES MOZZARELLA CHEESE
4 BONELESS CHICKEN BREASTS-PONDED TO 1/4 INCH THICKNESS
2 TSP VEGETABLE OIL
2 TSP UNSALTED BUTTER
2TBSPS PLUS 2TSP DRY WHITE WINE
1TBSP PLUS 1TSP PARSELY, CHOPPED
DIRECTIONS
Place slice of ham a slice of cheese on each flattened chicken breast. Fold in half. Secure with a toothpick. Heat oil and butter in a nonstick skillet over medium high heat. Saute chicken 3-4 min per side, or until chicken is barely opaque throughout. Add wine and simmer 5 minutes. Remove toothpicks before serving and garnish with parsely.
