Tempatation is a horrible thing. And being on any kind of a restricted diet typically eliminates one food or another that you like. That’s why a recipe like this can be so important.
Cookies aren’t something you normally think of as being on the Atkins Diet, but give these a try. If you miss sweets and treats, this recipe is for you.
INGREDIENTS
- 1/2 CUP CHUNKY PEANUT BUTTER
- 3/4 CUP HEAVY CREAM
- 1/2 CUP CHOPPED PECANS
- 2 TSP VANILLA
- 4 PKS SUGAR SUBSTITUTE
- 2 TBSPS SOY POWDER
- 1 TSP BAKING POWDER
DIRECTIONS
Heat oven to 325 degrees. Spray a cookie sheet with oil substitute. Mix all ingredients in a bowl. Blend well. Drop batter on cookie sheets by tspfuls. Bake about 10 minutes.
CARB GM PER COOKIE-1.3 GM-ISN’T THAT AMAZING!!
One tip: watch the sugar content in the Peanut Butter you choose. There are some “old fashioned” and low carb version that have no sugar. Seek those out for an even lower-carb treat.

I’ve never heard of “soy powder”……can that be purchased at a
regular grocery store?

Hello Renee. I know that certain soy powders are sold at the grocery store, but mainly soy powder based infant formulas. You might be able to find it in the organic section of the store. I can tell you that you more then likely will find soy power at most health food stores. If you find it, let us know. Good luck!
