1 Head cauliflower, chopped
1 Cup Miracle Whip Salad Dressing
1 Tbls Prepaired Yellow Mustard
1 Whole Dill Pickle
1 Small Onion
2 Hard Boiled Eggs
Salt and pepper to taste
Boil cauliflower for about 5 min until still just crunchy. Drain and cool. Boil eggs for 12 min and dice into small chunks. Cut up onions and pickles into small pieces. Add remaining ingredients and mix well. Mix in salt and pepper. Cool in refrigerator 1 hour before serving.
Serves 4-6 people

An excellent salad. It’s really refreshing and delicious.. Cauliflower tends to be bland vegetable (especially without any cheese topping or raw with a dip) but this recipe makes you forget about the carb loaded potato salad.
